Preparing the Almonds
Start by placing the
almonds in a small saucepan with cold water and bringing to a boil. Cook for about 2 minutes, then drain and cool the almonds under running water. This step is essential for easily removing the skins. Once peeled, place the almonds in a blender with a little fresh water and blend until you obtain a fine, velvety paste. To separate the liquid from the paste, use a clean cloth to strain the mixture, wringing well.
Preparing the Base
Transfer the strained liquid to a saucepan and add the
almond milk syrup and
sugar. Cook over low heat, stirring carefully for about 7-8 minutes. As they cook, the sweet, enveloping aroma of almonds will begin to fill the kitchen, creating a warm and inviting atmosphere.
Cooling and Freezing
Once the base is ready, turn off the heat and pour the mixture into an airtight container. Let it cool to room temperature, then close the container and place it in the freezer overnight.
