At this time of year, nothing beats the pleasure of a freshly baked cookie that captures all the sweetness and warmth of Christmas. Making these cinnamon and dried fruit cookies is a journey through enveloping aromas and a crunchy texture that makes them irresistible. Let's make them together: Start by coarsely chopping the assorted dried fruit for a flavorful mix. In a large bowl, combine the flour, hazelnut flour, and powdered sugar to prepare the base of the recipe. Add the egg, egg yolks, and cold butter cut into cubes to the dry ingredients. Mix until smooth. Add ground cinnamon to the dough for an irresistible Christmassy flavor. Transfer the dough to a floured surface and shape it into two loaves. Take ⅓ of the dough and mix it with the cocoa powder to create a cocoa loaf and a regular loaf. Wrap both loaves in plastic wrap and refrigerate for at least 30 minutes to allow the flavors to blend. Preheat the oven to 170°C (fan assisted). Roll out the dough to a thickness of 5 mm and use the cutters to create Christmassy shapes.
