  • 60 g chocolate chips;

  • 60 g pistachios.

Preheat the oven

To make these delicious cookies with chickpea flour, chocolate, and pistachios, start by preheating the oven to 180°C. While the oven is preheating, take two bowls: in one, mix the chickpea flour with the baking soda and a pinch of salt. These dry ingredients are essential for the structure of the cookies. In the other bowl, combine the seed oil, water, vanilla extract, and sugar, mixing well until smooth and uniform.

Preparing the dry ingredients

Now, gradually add the flour mixture to the bowl with the liquid ingredients, stirring carefully to avoid lumps. Continue mixing until the dough is smooth and soft. Now it's time to add the chocolate chips and chopped pistachios, which will make the cookies even more delicious. Make sure they are evenly distributed throughout the dough. Using an ice cream scoop, create balls of dough, trying to make them all the same size. Place them on a baking sheet lined with parchment paper, making sure to space them well apart. For a finishing touch, decorate each ball with a few extra chocolate chips and a few pieces of pistachio. Finally, bake the vegan cookies in a preheated oven for about 15-18 minutes, until they're a nice golden brown.
