Procedimento

Start by washing the apple thoroughly and drying it carefully. Cleaning the fruit is the first step to achieving a flawless dessert. Next, cut it into slices about 5 mm thick, starting from the center, so as to obtain four even slices. Carefully remove the core, including the seeds, to create well-defined spaces for the pecans. These spaces will add a welcome crunch to the dessert. Now, coarsely chop the dark chocolate and melt it in a double boiler, adding a teaspoon of coconut oil to achieve a silky, inviting texture. Prepare the apple slices for assembly by making a slight incision on the bottom of each slice with the tip of a knife. This will be the point where you will insert an ice cream stick. Before inserting the stick, add a whole pecan into the hollow where you removed the core. This step will create a contrast in texture and flavor. Place a wire rack over a bowl to catch any excess chocolate. Now, dip each apple slice into the dark chocolate, making sure to let the excess drip off, so you get a uniform, inviting coating. For a finishing touch, crack a few pecans with your hands and scatter them over the chocolate apple. A pinch of fleur de sel will add a touch of elegance and a contrast in flavor. Repeat the process with the remaining apple slices. Let them cool to room temperature, then transfer your chocolate pecan apples to the refrigerator for at least 30 minutes. This will give the chocolate time to harden and the apples time to cool. Before serving, remove them from the refrigerator about 5 minutes early to allow the flavors to meld together.
