Women should be celebrated every day. Today in particular, surprise her with a delicious recipe: beef bombette with chopped pistachios!
In a bowl, combine the grated Parmesan and Pecorino cheeses, finely chopped parsley, breadcrumbs, and chopped pistachios;
mix the breading ingredients well;
cut the cheese into cubes about 1 cm thick and 3 cm long. Lay the beef carpaccio slice on a cutting board and sprinkle the breading with a spoon;
place the cheese in the center and roll the roll up, making sure to seal the sides well;
repeat with all the slices of meat. Preheat the oven to 200°C (400°F);
in a small bowl, add enough extra virgin olive oil to dip the rolls;
pierce each roll with a toothpick, dip it in the oil, drain well, and then roll it in the breading;
Arrange the bombette on a baking sheet lined with parchment paper and drizzle with oil. Season with salt and pepper and drizzle with oil before baking. Bake at 200°C (400°F) for 15 minutes, then move the pan to the top rack and bake for another 10 minutes. Remove from the oven and serve hot.
