Then add the lentils and sauté briefly, seasoning with salt to enhance the flavors. Pour the curry and hot water mixture over the lentils, making sure to completely cover them. Cover the pan and cook the lentils over medium heat for about 20 minutes.
Preparing the Prawns:
While the lentils are cooking, prepare the prawns in a second pan, sautéing them gently in a drizzle of oil for about two minutes per side. Deglaze with a little white wine to add depth to the flavors, and season with salt to taste.
Assembling the Bowl:
Once the lentils are cooked, uncover the pan and let the cooking juices evaporate slightly. While they cool slightly, prepare your bowl by arranging the curried lentils in the center, the shrimp on one side, and the avocado on the other.
