Ingredienti

  • 500 g of flour;

     
  • 180 g of sugar;

     
  • 120 g of sunflower oil;

     
  • 50 g of rum;

     
  • 2 eggs;

     
  • 80 g orange candied;

     
  • 80 g of pecan nuts ZIG;

     
  • 80 g of mandorle ZIG;

     
  • 80 g d’raisins;



  • 1 packet of baking powder;



  • 2 teaspoons of cinnamon;



  • 1 pinch of salt;



  • 1 teaspoon of vanilla extract;



  • Candied cherries for decorating.

Procedimento

Start by soaking the raisins, then in a large bowl combine all the dry ingredients: flour, sugar, baking powder, cinnamon, and a pinch of salt. Mix well with a fork and add two eggs. Now combine the liquid ingredients: oil, rum, and vanilla extract, continuing to mix with the fork. Coarsely chop the pecans and almonds, squeeze the raisins, and add the dried fruit, raisins, and candied orange to the dough. Knead and form a ball, roll it out on the pastry board with a rolling pin, and try to obtain two long loaves about 4 cm wide. Twist the two strands together, join the two ends to form a donut, and transfer it to the baking pan lined with parchment paper. Decorate with candied cherries and bake at 180 degrees Celsius for 30-35 minutes. That's it, your Christmas cake is ready! (recipe created in collaboration with Laura “ladfoodie”)
