salt and pepper Toast the pumpkin seeds and pine nuts in a pan for a few minutes, then place all the ingredients in a food processor and process until smooth. To make zest easier, store the lemon in the refrigerator and grate the zest when frozen. Swordfish fillet with pumpkin seed crust Swordfish fillet in a crust is an easy recipe that adds a touch of originality to your lunches. 1 kg swordfish fillet >
450 g peeled pumpkin >
150 g radicchio >
80 g shelled pumpkin seeds >
extra virgin olive oil >
fine and coarse salt Remove the skin from the swordfish fillet. Coarsely chop the pumpkin seeds and spread them on a sheet of parchment paper. Place the swordfish fillet on top and carefully roll it in the sunflower seeds, ensuring they adhere to all sides. In a greased pan, brown the fish for 2 minutes per side. Turn off the heat and season with coarse salt. Place the fillet in a baking dish with the remaining pumpkin seeds and a little oil. Bake at 200°C (400°F) for 10 minutes, then cover with aluminum foil and remove from the oven after 12 minutes. Cut the pumpkin into chunks and brown in a little oil over high heat for 2-3 minutes. Add salt, reduce the heat, and continue cooking for another 12 minutes, covered. Meanwhile, clean the radicchio and halve it lengthwise. Rinse it and add it to the pumpkin. Let it heat up, then turn off the heat after a minute. Cover and let it rest for a couple of minutes. Remove the swordfish from the oven and serve it on a platter with the pumpkin and radicchio.
