Method:
- Preparing the base Place the dates, almonds, and mixed seeds in a blender. Blend until the mixture is grainy and smooth. Transfer everything to a bowl and add the peanut butter and honey. Stir with a spatula, then knead briefly with your hands until the mixture forms a compact mass.
- Shaping the donuts Take a silicone donut mold and distribute the mixture into the cavities, pressing firmly with your fingers to shape. Refrigerate the mold and let it rest for 1 hour.
- Chocolate coating Melt the dark chocolate in a double boiler. Once completely melted, add the pistachio crumbs and stir to combine. Remove the donuts from the refrigerator and carefully unmold them. Dip them one at a time in the melted chocolate, using two forks to coat them evenly.
- Cooling and Serving Place the nut donuts on a sheet of parchment paper and let them cool at room temperature for 30 minutes. Then, transfer them to the refrigerator to allow the chocolate to harden completely.
