Protein Waffles with Almond Flour

Ingredients

240 g of almond flour;

140 g of milk;

2 eggs;

2 tablespoons of sugar;

2 and ½ teaspoons of yeast for desserts;

¼ teaspoon salt;

vanilla extract.

Procedure

First, separate the yolks from the whites. In a bowl, beat the egg whites until stiff. In a second bowl, whisk the egg yolks with the sugar, almond flour, vanilla extract, salt, baking powder, and milk. Add the beaten egg whites to the mixture. Fold in gently with a spatula, moving from the bottom up. Heat a well-buttered waffle iron. Add the mixture to the iron and close the lid. Cook on medium heat for about 5 minutes (depending on the iron). Lift the waffles very carefully;



they may break when hot. Continue until all the batter is used. Drizzle the waffles with the almond cream, the berries, and a little cinnamon, if desired.
