Ingredients for 4 snowmen:

120 g coconut flour + more for dusting the balls;

60 g almond cream;

1 teaspoon coconut oil;

1 teaspoon honey.

4 gummy candy strings;

Royal icing without egg whites, black - 50 g powdered sugar, 1/2 teaspoon lemon juice, 2-3 drops of black gel food coloring;

Orange egg white-free royal icing - 50 g powdered sugar, 1/2 teaspoon lemon juice, 2-3 drops of orange gel food coloring.

Procedure

In a bowl, mix the coconut flour with the almond cream, coconut oil, and honey. Form 4 small balls and 4 large balls. Add more coconut flour to a small bowl. Roll the balls in the bowl to coat them in "snow." Arrange the balls on a plate lined with parchment paper. Freeze for 30 minutes. Prepare the icing for the decoration by mixing the powdered sugar, lemon juice, and food coloring in two bowls. Transfer to a piping bag and refrigerate. Remove the balls from the freezer and place the small one on top of the large one, securing them with almond cream and wrapping a gummy red ribbon around the neck. Stick two toothpicks into the large ball to make the arms. Finish by decorating the carrot noses with orange icing and the eyes, buttons, and smile with black icing. The snowmen are ready! Store them in the refrigerator in an airtight container.
