To prepare these delicious strawberry puffs with yogurt cream, carefully follow the instructions below:
Start by heating a saucepan containing milk and sugar over medium heat.
Heat until the milk reaches the desired temperature.
Gradually add the cornstarch to the saucepan containing the milk and sugar. Stir the mixture gently with a whisk until the cream thickens and reaches the desired consistency.
Remove the saucepan from the heat and let the cream cool slightly. This will allow the cream to cool slightly before using.
Add the yogurt to the thickened cream in the saucepan and whisk vigorously until smooth, ensuring the yogurt and cream are well incorporated.
Take a roll of puff pastry and, using a pastry wheel, cut out eight rectangles, leaving a border of about 1 cm on each side.
Using the tines of a fork, prick the rectangle in the center, leaving a small opening for the filling. You can also lightly score the inside edges of the rectangle without cutting the puff pastry.
Spread the yogurt cream over the inner rectangle of the puff pastry. Make sure to distribute the cream evenly over the entire surface.
Cut the strawberries into thin slices and arrange the strawberry slices on top of the cream in two vertical rows, covering the inner rectangle of the puff pastry in an attractive arrangement.
Gently brush the edges of the puff pastry with beaten egg yolk. This will give the edges a golden, crispy finish during baking.
Sprinkle the surface of the puff pastry with sugar and distribute the pine nuts evenly over the cream and strawberries.
Bake the puff pastry in a preheated oven at 180°C for about 15 minutes, or until golden brown and crispy.
Once the puff pastries are ready, carefully remove them from the oven and let them cool slightly before serving.
